Tres Leches Cake: Happy Cinco de Mayo!

Glazed Streusel Coffee Cake

This recipe is from an old church cookbook.  I finally got to visit my cousin’s new baby and took this coffee cake to them along with their gift.  Since the recipe makes two cakes we kept one at home too.  I’m not a big cherry fan, but this cake was delicious.  The batter is really light and fluffy.  You could easily substitue the cherry pie filling for your favorite fruit.  I think that apple would be really tasty… I might try that next time!
Cherry Coffee Cake {print recipe}
1 1/2 sticks butter
1 1/2 cups sugar
3 eggs
1/2 teaspoon pure vanilla extract
3 cups flour
1 1/2 teaspoon baking soda
1 cup sour cream
1 21-ounce can cherry pie filling {or other fruit}
Streusel Topping
1/2 cup flour
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 stick butter
Glaze Topping
3/4 to 1 cup powdered sugar
1/2 tablespoon butter, melted
1 tablespoon milk, warmed
Preheat the oven to 375 degrees and grease two 9-inch round cake pans.  Cream the butter and sugar together.  Beat in the eggs until the mixture is very light and fluffy, and then add the vanilla.  Combine the flour and soda and add to the creamed mixture alternately with sour cream.
Divide the batter evenly between the two pans.  Dollop the cherry fruit filling on top.  Using a pastry blender, combine the ingredients for the streusel topping - sugar, butter, cinnamon, and flour until crumbly.  Sprinkle over the top of the cake and fruit.  Bake for 30 to 35 minutes until the cake tests done.  Remove from the oven and cool slightly.  Combine powdered sugar, melted butter, and milk for glaze.  Drizzle over the top of the cake.  Serve.  Yields two 9-inch round cakes.

My Husband’s Favorite Dinner

Pork Chops, Stuffing, and Baked Beans.  Jeremy is always requesting these three things for dinner.  It’s a good thing they are all quick and easy!  After I got done making this the other day and he had finished eating, he said, “That’s the best dinner you’ve ever made!”  While I treasure his compliment, I don’t necessarily feel the same way.  I think I’ve made much tastier, and more extravagant, meals.  Don’t get me wrong, I like these foods, I’m just not crazy about them.  Most of the time I just find them a bit plain and boring…  However, if I was just judging this meal in the pork, beans, and stuffing area then I would agree that this meal was a 10!
