This recipe is the perfect dish to make for any potluck or upcoming summer party. You must add this to your 4th of July menu. It comes from my Aunt Karen who unfortunalely lives far away from us in Florida. Even though we don’t get to see each other often, we often exchange recipes. For holidays and get togethers, my mom and her often chat about their menus and come up with various new ideas that they each have tried. Chicken Caesar Salad

I love a good salad. Unfortunately, the best part of the salad for me is everything that’s fattening – the cheese, croutons, and dressing. That’s probably why caesar salad is one of my favorites! However, this version is light and natrually low-fat. Plus, it uses high quality fresh ingredients. I adapted it from Bethenny Frankel’s Naturally Thin, a book that gives great advice about eating smart while still eating what you love.
