Chicken Caesar Salad Wraps

Blogging… I miss you!  Obviously, I’ve been away from my site a long time.  It’s been over one year!

Life likes to throw things at you that you just have to deal with, and let me tell you… It’s been one heck of a year.  There have been many changes in my life this year, some good and some bad.  One major change is that I completed my master’s degree and started a new job as a high school counselor.

However, the most exciting change is that I’m a new auntie!  My sister and her husband had a baby boy, Tate Cooper, just this March and I have loved being a new aunt.  He’s so precious.  Among other things, these things have kept me quite busy and blogging was pushed to the background.  But I’m back!

I’m starting again with the very first recipe I ever posted – Chicken Caesar Salad Wraps.  It’s so easy, I’m not even sure if I can call it a recipe!  In fact I don’t really measure the ingredients, I just kinda throw it all together.   {Shhh… you don’t have to tell anyone.}

These wraps get made at my house ALL the time because this meal works for so many occasions… lunch, dinner, parties, showers, picnics, etc.  They’re great for the cabin too.  It’s my go to recipe when I want a quick and effortless meal.

They might sound a little boring, but there’s one thing that makes them unique…  Chow Mein Noodles.  Genius!  That’s right… I use chow mein noodles in place of croutons.  They add the perfect crunch!  And it makes all the difference.

Next time you are wondering what to make for whatever reason, go easy on yourself and throw this together.  Everyone will love them :)

Chicken Caesar Wraps
4 spinach wraps
4 cups romaine lettuce, chopped
1/2 cup parmigiano-reggiano cheese, freshly grated
1/4 cup light caesar salad dressing (Marzetti’s brand is my favorite!)
1 cup chow mein noodles
1 large grilled chicken breast, chopped in small pieces

Mix all ingredients together and roll up into spinach wraps.  {Proportion this however you like.   Just add a little of this and a little of that until it looks good.}  Enjoy!

Hint:  Cut in half and insert a toothpick to hold together at a party for a nice presentation. 

Chicken and Vegetable Dumpling Soup

Chicken and Dumpling Soup is an all time classic comfort food.  The combination of veggies and chicken in a creamy broth mixed with dumplings… I’m not sure if too many things can top it!

It’s a simple, and yet beautiful, dish.  While there are a few steps involved and it does take a little time to prepare, there is nothing to be intimidated about.  The ingredients are easy to throw together - even the dumplings.  To save a little time you could skip the first steps by using a rotisserie chicken.

Crispy Southwest Chicken Wraps

Most of my dinners end up taking way longer to prepare than I originally expect.  Either I have to run to the grocery store for an ingredient that I don’t have, or I end up using and having to clean ten different bowls, or there’s just too many pots in the fire at one time.  These Crispy Southwest Chicken Wraps are the exception.  When you need a break in your busy week and are looking for a quick, easy and delicious dinner then this is it!  All of the ingredients that are called for in this recipe are staples that I already have in my kitchen.  You could also substitute many of the ingredients to what you have on hand.  Do you have left over rice or chicken that you don’t know what to do with?  This is a great way to use it up.  It’s so easy to make when you’re in a pinch!  And if you want it to be more healthy than use some brown rice, whole wheat tortillas, and include some more veggies like tomatoes or corn.  Serve it with a dollop of sour cream or guacamole and you’re all set! Chicken Noodle Soup

 Well, I’ve been back to school for about a month now.  My immune defenses never hold off for very long, and right from the get go I usually get sick.  This year was no different, and in fact, it seemed to hit little harder than normal.  It’s been quite the rough start to a new year.  I keep thinking each year will get better, but I’ve been busier than ever.  I don’t think that any of the stress has helped my health, either. Sour Cream Chicken Enchiladas

 

This meal was super simple and fast to throw together… and tasty too!  It’s a great meal to make when you have leftover or rotisserie chicken to use up.  The enchiladas are creamy and full of flavor.  I substitued out the regular sour cream and cheese for reduced-fat versions and with all the flavor you couldn’t even tell a difference.  Hey… every little bit counts!  Also, if you have any leftovers these are great the next day.
