Hi!  I’m Erin, the person behind easy.everyday.eats.  I live in Clarkston, Michigan with my husband and two four-legged kiddies.  During the day I’m a high school counselor, and in my free time I enjoy being creative in any way I can.  Everything you see here I cook. bake. photograph. write.  I’m inspired by my mom and grandma who I grew up helping in the kitchen {many times that meant licking the cookie dough off the spatula… but as a kid I classified that as help}.   There was always that wonderful smell of something baking in the house.  And that’s where my love for cooking began.

On this blog I share the classic dishes that I ate and learned to make growing up.  I wanted a way to organize recipes as well as make my grandma’s recipes accessible to family… and whoever else is willing to read this blog!  The recipes here are a combination of my own or that I’ve found, tried and loved.  I also feature my grandma’s original recipes, and some with a slight twist.   While I like to keep most of my food simple, I also like challenging myself and trying new things.  At times I might make something a little more involved, but for the most part it’s easy everyday eats!

Also, I live in too beautiful and too unique of state to not share it with all of you.   For that reason, I’ve included a “Michigan” portion of the blog where I chronicle food in tourist areas and foodie towns, and of course share Michigan’s beautiful scenery.

 

Food Philosophy.

I love the simple complexity of food.  It’s beautiful.  It’s enjoyable.  It brings people closer.  It’s classic and contemporary.  All at the same time.

Food doesn’t have to be difficult.  I love making everything from scratch, and prefer it that way, but let’s be practical.  It just doesn’t always fit into my schedule.  Often times I opt for that jar of marinara sauce instead of making it myself.  It just works out that way.  And you know what?  It still turns out delicious.  With that being said, I like making recipes from scratch when I can and you’ll find many homemade recipes here, but that doesn’t mean I use them all the time.

I hope you enjoy this blog and that its recipes inspire creativity in your food and other areas of your life!

Here are a few random facts …

I’m proud to be a Michigander.  Currently I live just north of Detroit, but I was born and raised in the thumb, smack dab in the middle of farm country {you fellow Michiganders know what I’m talking about, but quite possibly no one else}.

From age 8 to 17 I showed pigs at the county fair.

I’m not into sports.  I find out who’s playing in the super bowl the day of the game.  However, it was the one football game I did watch this year.

Snowmobiling and four-wheeling are my all time favorite activities.

I am horrible at skiing… but I’m determined to try.

Music gets me through each day.

Photography is my new hobby.  I wish I had unlimited funds to spend on lenses… but I don’t.

I love my job, but if I were to do it all over again I would go into interior design or culinary.

I’m obsessed with quotes.

I really want a tattoo, but I have never gotten one… yet.

I practice attempt to do yoga.

And of course, I love to travel.  Who doesn’t?
