Balsamic Pancetta Mac and Cheese

Growing up I was very influenced by foods that my dad did or did not like.  At the table he made a point of saying when certain foods were “gross”… such as fat on meat, or milk.  My mom had to pretty much bribe my sister and I to drink a glass.  We hated it.  Milk still isn’t my favorite, but it’s not so bad.  At least not as bad as I convinced myself it was.  You see, my dad grew up on a dairy farm and to this day you cannot get him to drink milk.  He says he had to drink it too much as a kid, and then once he started farming I guess he was grossed out by the process.  I’m not sure…  However, the funny thing is is that he loves cheese.  He eats cheese all the time {it’s something that we make fun of him about}, even on his toast for breakfast every morning.  But we all know that cheese is milk before it goes through the process and becomes cheese.  So I don’t really get it… [Read more...]

Chicken and Vegetable Dumpling Soup

Chicken and Dumpling Soup is an all time classic comfort food.  The combination of veggies and chicken in a creamy broth mixed with dumplings… I’m not sure if too many things can top it!

It’s a simple, and yet beautiful, dish.  While there are a few steps involved and it does take a little time to prepare, there is nothing to be intimidated about.  The ingredients are easy to throw together - even the dumplings.  To save a little time you could skip the first steps by using a rotisserie chicken.

Crispy Southwest Chicken Wraps

Most of my dinners end up taking way longer to prepare than I originally expect.  Either I have to run to the grocery store for an ingredient that I don’t have, or I end up using and having to clean ten different bowls, or there’s just too many pots in the fire at one time.  These Crispy Southwest Chicken Wraps are the exception.  When you need a break in your busy week and are looking for a quick, easy and delicious dinner then this is it!  All of the ingredients that are called for in this recipe are staples that I already have in my kitchen.  You could also substitute many of the ingredients to what you have on hand.  Do you have left over rice or chicken that you don’t know what to do with?  This is a great way to use it up.  It’s so easy to make when you’re in a pinch!  And if you want it to be more healthy than use some brown rice, whole wheat tortillas, and include some more veggies like tomatoes or corn.  Serve it with a dollop of sour cream or guacamole and you’re all set!
